  • a/n (as needed) lake perch fillets about 6 oz. pe person

Breading Station:

Perch Recipe
  • a/n seasoned flour (I use Lawry’s Season Salt and black pepper)
  • a/n egg wash whole eggs blended with milk (2 parts egg to 1 part milk
  • a/n Panko bread crumbs
  • a/n vegetable oil for frying (peanut works great if no worry about allergies) at least 6 cups

Preparation Instructions—

Bread the perch a few pieces at a time.  FLOUR FIRST, THEN EGG WASH, THEN BREAD CRUMBS(this can be done several hours ahead of time)  Preheat oil to 350 degrees (if you don’t have a thermometer go buy one.) I use at home the Copper Chef XL 11 in’ square cooker with fryer basket Drop the fish and fry until golden brown and starts to float. About 6 or 7 minutes. drain excess grease on paper towel and serve.
