When tasked with selecting the best sauce recipes that could serve as a delicious lesson for home cooks, Chef Kurt Fahler had a difficult task. As an experienced culinary artist, he obviously knows how to make a variety of sauces that can be paired with thousands of ingredients to make stunning meals.
He decided to go off the reservation for this one and create his own sauce at home to show people just how easy it is to create professional chef quality meals from your own kitchen. He settled on his Alfredo Alfresco because it’s something that he created in his won kitchen. If it’s good enough to please his neighbors, friends, and his family, it’s definitely good enough to teach cooks like you how to make alfredo sauce that grabs attention.
This recipe is focused on Chef Kurt’s Alfredo Alfresco sauce, but it’s also your guide to crafting a full dinner. In fact, you can use this one recipe to make many different meals just by varying your choice of meat and pasta. Try it with linguine or fettucine noodles one time and then switch it up to bowties or penne on another day. While Chef Kurt uses sausage enhanced by Italian dressing, you may choose, chicken, steak, or any other meat that suits the occasion. Swapping out the vegetables for unique combinations that you find appetizing will give you even more flexibility.
This is one of the more complex Chef Kurt Fahler recipes featured within this collection, but it’s one of the best sauce recipes that anyone can master. Read through the instructions at least once before buying your fresh ingredients and focusing on each step. The small details make a big difference, so make sure to follow Chef Fahler’s guidelines to produce the perfect alfredo sauce.

SAUCE INGREDIENTS (2 cups heavy cream – 1 Knorr alfredo sauce pkt. - ¼ cup milk – 1cup shredded parmesan cheese – 1 tsp. chopped garlic – ¼ cup white wine – 2 tbls. Butter – ½ tsp. black pepper)
GRILLED VEGTABLES (Use any vegetables you like. I used tomatoes, onions, and asparagus. Season with olive oil and McCormick grill mate BBQ rub)
GRILLED MEAT (chicken breast, pork loin chops, steak.) Whatever you feel like grilling. I found some brats on sale and jazzed them up to be like Italian sausage. I Just glazed them with Italian dressing that I doctored with a little extra garlic and oregano. My neighbors were going crazy!
PASTA (again whatever you like) Chef likes linguini. Cook it, then rinse it till cool, drain well then toss with olive oil, garlic powder salt and pepper to taste.
Preparation Instructions—Ok let’s talk about the sauce. Start with wine and garlic in a medium sauce pan on medium to high heat. Bring to a boil and reduce by half (about five minutes) Now add the cream, milk and the Knorr sauce packet. Stir constantly until the sauce thickens. Turn the heat down and whisk in the Parmesan cheese (a little at a time). Whisk in butter until incorporated, then simmer for five more minutes and add pepper. This makes close to four cups –enough for four servings.
I built my dish by placing the pasta in bowl first. Top with a ladle of sauce then the vegetables and then the sausage. Sprinkle more cheese and serve with French baguette and rosemary garnish
